I have decided that for the next few weeks, I would try to make your life a little easier. From now, until the Wednesday before thanksgiving, I will be posting a new crock pot recipe each weekday. I’m in full swing with busy season, and hockey season having just started. We’ve spent the last two weeks ordering takeout, or swinging through drive-thrus. The kids are thrilled to have several new pieces of junk to add to their collection of kids meal toys, but I am over wasting money on gross food.
Lucky for me (and, hopefully, you) I have a bit of an unhealthy obsession with my crock pot (this is the one I use and I looove it!), and I have figured out how to make almost anything a quick prep in the morning. Sometimes, even things that appear to be ridiculously quick and easy to make, are things that I won’t have time to make in the evening, when we are in the throws of homework, and rushing out the door for after school activities.
I hope the next few weeks help you out!! I promise that the recipes are super easy (this one may be the hardest), use ingredients that are super easy to find and often already in the house, and require minimal prep time. The bonus for me is that I will be on top of making dinner during the week.

hearty chicken chili
15 minutes of prep time in the morning, and is cooked in the slow cooker, just about makes this the most amazing recipe on earth. The recipe makes enough for my family of 6 to eat twice. It would be a great idea to put half of it in a freezer bag for another night! If you’re not interested in taking the time to meal plan, or you struggle with meal planning, you should totally check out the $5 meal plan. (Use this link to get 2 weeks of meal plans free!) One more little tip that makes this even easier, and helps if you forget to thaw the chicken the night before– i use frozen boneless, skinless chicken breasts. I run them under hot water for a minute or so, just long enough to clean the chicken up (cut off the fat, etc). then i just throw them into the crock pot still frozen on high. By the time it’s dinnertime, everything is cooked through, and the chicken isn’t overcooked.
On to the recipe, and the secret recipe…
ingredients
- 2- 28oz cans of crushed tomatoes
- 1- 15oz can of black beans, drained and rinsed
- 1- 15oz can of northern beans, drained and rinsed
- 1- 15oz can of mild chili beans
- 1- 1lb bag of frozen corn (does not need to be thawed)
- 3 medium sweet potatoes, peeled and sliced <— secret ingredient— this absolutely makes this chili
- 1/2 cup bbq sauce
- 2 envelopes of taco seasoning
- 3 med-large boneless chicken breasts
Combine all ingredients in the crockpot– putting the sweet potatoes and chicken in the bottom of the slow cooker/ crockpot. Cook on high or 3-4 hours, or on low for 7-8 hours. Once the chicken and potatoes are cooked, remove the chicken and shred it and return to the crockpot. Break up potatoes with a fork to make them more bite sized. That’s it!!
We like ours with shredded cheddar and corn chips sprinkled on top.

I can honestly say that I’ve never had an issue with the chicken drying out in this particular recipe. I think the key is to use whole chicken breasts or tenderloins, rather than chicken that has already been cubed. Also, if I know it’s going to be a long day and therefore it will be in the crock pot for a long time, I do use chicken breasts that haven’t completely thawed. Hope this helps!
