There is a chill in the air the last couple of days. We have been blessed this year with an insanely warm (for us) fall. The cold weather is coming though. Only 2 days left in this little crock pot series. I am excited to have made it this far!!

Crock pot recipes are my favorite (this is my slow cooker, and I love that it is programmable, and has a few different settings. I also love that it has the clasps on the side so that you can secure it if you travel to a pot luck or something)!! They are just so easy and allow me to be flexible when I am planning dinner times. Here are a couple that I have posted recently- chicken chili, enchilada soup, pulled pork.
slow cooker creamy broccoli
cheese soup
ingredients

- 4 cups chicken broth
- 4-5 cups frozen broccoli florets
- 1 cup carrots, shredded
- 8z cream cheese cut into 1 inch cubes
- 1 cup italian dressing
- 8 oz shredded cheddar cheese
- 1 cup velveeta cheese cubed
Place broccoli, shredded carrots, chicken broth, italian dressing, and cream cheese in the crock pot. Cook on high 4-6 hours and low 6-8 hours. About an hour before serving, stir everything until cream cheese is well blended. Add the rest of the cheese and stir. Give everything another good stir once the cheese is melted.
Garnish with croutons and shredded cheese.

The Italian dressing part is interesting. I make one from a recipe like Panera that is very good, but quite fattening!

i add italian dressing to a lot of things. i think it gives it an extra kick!!
